1. Uses
Grilling: Most common use; cut to customer's preferred thickness
Boiled pork (Suyuk) / Steamed: Cut into chunks (6-7 cm)
Stir-fry: Slice thin (0.3-0.5 cm)
Stew (Jjigae): Cut to roughly two pinky-finger joints in size
Charcoal grill: Cut 2-2.5 cm thick
2. Basic Preparation & Grilling Display
KIMCHI MART uses skin-on five-layer belly by default! If a customer requests samgyeopsal (three-layer), remove the skin before selling!
Before cutting, scrape the skin (remove hair & odors), then slice
Remove the cartilage bone from the first 5 slices
Score both sides of the tail-end (michuri) section
For grilling: cut 1-1.5 cm thick. Mix rib-side and tail-end pieces. Arrange neatly in rows, 500-600 g per tray. Place center rib through start of tail-end on top
3. Sales Precautions
Display as much tail-end as possible for grilling. Only the last unusable 2-3 cm goes to stew cuts (sold at grilling price)
For fatty areas, trim fat at an angle without detaching the meat
Weigh before slicing: under 6 kg = 9 rows, over = 10 rows
Set aside 10 Grade-A center pieces for top. Interleave rest with plastic (no overlapping)
2. Old-Style Moksal
Thaw, slice with slicer. 77 tray, alternate A & B with plastic. Grade A on top
3. Precautions
Plastic layers: no overlap, keep neat
Old-style = THICKER than Sareureu!
Must be straight slices → thaw more than Sareureu

1. Preparation & Display
Remove connecting flap to lower loin → sell as "Kkot-deungsim soup meat" (cut or skin-packed)
Before cap meat: shape rounds. After cap meat appears: shape rectangles
Difficult B-grade: separate loin/cap, display as bite-size. Sell unattractive B-grade at 1,000-2,000 KRW/100 g discount
2. Precautions
Score connecting flap at yoke meat (meong-e-sal) junction
Remove yoke meat from ~10 cm (chuck side) onward for soup. Score everything before that. VIPs at manager's discretion
Remove side strip from ~4-5 cm (chuck side) for soup. Score before that
Don't remove tough center (tteok-sim) — hurts cost ratio. Only remove when it detaches from B-grade or customer requests
Don't try 100% fat removal — loin is a marbled cut, customers understand. Some fat is a selling point
Odor starts after 30 days. 35 days = absolute deadline

Sell with tough center (tteok-sim) intact by default
Flap gets larger toward upper loin — score and sell as far as possible (soup only if truly unworkable)

Core Service Principles
All interactions must be delivered with a friendly, loud voice and energetic attitude.
Think of it as having a comfortable conversation with the customer.
When customers are in the store, minimize private conversations between staff. (If it's a topic the customer can laugh about too, it's okay! Just ensure customers never feel ignored or neglected.)
1. Customer Entry
When a customer enters the store
First staff to notice: "Welcome! Hello!" (loud, bright voice)
Other staff: "Hello~!" (echo the greeting with equal energy)
Put on your mask as soon as a customer enters! (Creates a hygienic impression)
"Are you looking for a specific cut?" (Dedicated staff moves toward the floor)
"Let me help you with payment! You purchased XXX today, total is XXX won!"
"Card received!" (Confirm card/cash/phone)
"I'll help you earn points. Could you tell me your phone number from the beginning?"
Points Enrollment by Customer Type
Returning customer: "Is this [name]? Thank you so much!"
New customer:
"Thank you so much for your first visit! Were you referred by anyone?" (Always check referral source!)
"Our points earn 1% per purchase, and we'll send you texts about events and sales!"
"May I have your name?"
"We send a soup-meat coupon on your birthday. May I have your date of birth?" (If female customers seem uncomfortable giving their age, just take month/day — staff estimates the birth year)

During review campaign periods: Guide customers to write reviews while their meat is being prepared. (No pressure!)
"Would you be able to spare just 1 minute? I'd love to give you an extra pack of Grade 2+ Korean beef!"
Why actively recommend to customers who refuse:
Benefits: event/sale texts, points usable like cash, additional perks
Frame it as "you'll miss out" rather than "it has benefits":
"You can only receive event notifications if you sign up for points!"
"These points work like cash for buying meat! You'd be losing out if you don't!"
4. Coupon Usage
All coupons apply at payment. Must select from the Discount/Coupon tab!
When a coupon provides a product (not a discount), enter that product's price in the payment screen too Example: Birthday coupon gives a free soup-meat pack → add its price to the transaction
PayHere coupons: Follow standard procedure (Discount tab → enter phone → select coupon)
Naver coupons: Customer shows screen → press "Use coupon" button → provide the item
"Thank you!! Be happy!!" (One staff at door, opens it for them. Running to the door = guaranteed smile!)
Situational Greetings + "Be happy!" (mandatory)
Weekend: "Thank you! Have a happy weekend!"
New Year: "Happy New Year!"
Holidays: "Have a wonderful holiday!"
Hot summer: "Thank you for coming even in this heat!"

3. Continue the conversation — connect beyond just the meat
Soup Meat (Gukgeori)
"How much do you need?"
"Sliced or as a whole piece?"
"I'll give you something delicious!" (Choose appropriate soup cut — usually brisket/yangji)
If asked "What cut?": "It's brisket! Today's brisket is excellent!"
If for miyeokguk (seaweed soup): "Whose birthday is it?"
→ "Everyone clap!! (give a free soup-meat pack as birthday gift) Happy birthday!"
If undecided: "Let me pick something delicious for you — go with collar!"
Baby Food (Iyusik)
"How much do you need?"
"Do you have a preferred cut for baby food?"
If no preference: "How young is the baby?"
→ Very young = tenderloin (ansim); Older baby = bottom sirloin (boseopsal)
"Since it's for a baby, I'll sanitize the cutting board and hand-mince it with a knife!" (MUST mention this!)
If asked "Why not use the grinder?": "Even if it's clean, multiple meats go through it. For babies, we always hand-mince!"
(Make a heart shape with the minced meat) "I made a heart so your baby eats well!"
Curry
"Beef or pork?"
Beef: "I'll give you something delicious!" → choose from hongdukke, kkuri, boseop, yangji based on inventory. Don't name the specific cut unless asked
If asked: explain based on what needs to sell that day
Pork: "I'll give you tenderloin! How much?"
Braised Beef (Jangjorim)
"Beef or pork?" (Pork → recommend tenderloin)
Beef: "Do you shred it?"
If shredding: "Lean or savory?"
→ Lean: "Today's eye of round (hongdukke) is great!"
→ Savory: "Today's brisket (yangji) is great!"
If not shredding: "Try beef shank (arongsatae) — it's incredible for braising!"
